I always use red wine in beef casserole. It reduces and leaves a thick gravy.
Beef casserole, makes lovely sauce.
Get a nice bit of beef and use the juices and wine to make a lovely gravy.

Lovely in a casserole with lamb
Or poach some pears in it with vanilla and sugar
Macaroni Cheese accompanied by drunk friend.
chicken chasseur?
Jamie Olivers 'hunters chicken' is fabulous
spag Bol for me....brown the mince then add red wine then add carton/jar of passata. Add garlic, herbs, onions, mushrooms, peppers, baked beans, peas what ever takes your fancy. Simmer to reduce the sauce right down. Cook spaghetti until "al-dente" then add to the bolognaise mix and continue to simmer for another few mins.
Serve with grated parmesan.
Lamb shanks in a red wine and rosemary sauce. Yummy.
