What would be a good field of work to get into, and why?

(Please remember to answer the "and why" as that is the most important part of my question). :-)
My Mother has always told me the medical field is always going to be the best place for work. People are ALWAYS going to need Nurses and Doctors and this is true. I only wish I was better suited for this vocation otherwise I would go for it!
I have basically decided to go back to into full time education, but I am going to really think long and hard about what field I want to go into, this is FOUR years of my life we are talking about and I am already 27, so I need to make sure I have a set career path and a job for life at the end. I am open to all prospects, and I don't have anything that I particularly love or enjoy doing or feel passionate about. So in all honesty my chosen career will be about making sure I live a comfortable life, have a good pension plan, good career building prospects, a future etc. etc.
However I am dubious about going into a dying profession, or one in which I will struggle and fight my butt off just to find work or an entry level position at the end of all that studying... which is why I am asking the question.
Can anybody help?
