I have to make a 3 tiered cake for my daughter, I've made the bottom one, it's fruit so should keep.
I need to make the top 2 layers sponge (one chocolate one plain) My question is... will they keep for 2 weeks if I ice them almost straight away or do they need to be made nearer the time.
Thank you x

I'd make them nearer the time, choc and plain cakes can go quite dry
you can make them 2 weeks before and freeze them masma, then defrost them and ice them when you need them, I wrap mine in double freezer bags, and they defrost quite quickly, and are fine when iced..................
