In common with several past monarchs, he is not compelled to use the first of these when he assumes the throne. He has said he would prefer to be King George VII as a follow-on from his grandfather.
Quizmonster - you're in good copmpany if you get all his names mixed up - didn't Diana do the same thingwhile reciting the marriage vows?
As for bonnie Prince Charlie... as noted recently on the site, his granddad George VI was born Albert Frederick Arthur George and moreover, to make us all wince at their stupidity, he actually had a brother called George. More than enough to make Michael Jackson (father of Prince Michael, Paris Michael and Prince Michael II) seem almost sane. Certainly precedent for Charlie to call himself Prince Whatever.

Why did Charles II have bad luck? He died at 55 (quite old in the 17th century) after a prosperous reign and a fairly, er, lively love life. Why was he nicknamed the Merry Monarch if it was such a miserable existence? Personally, I would have thought that the way he treated his unfortunate wife would serve as good role model for Charlie Boy.
