Can this be made with ready made pastry? If so what sort (short crust, rough puff etc?)

filo pastry is best for mille feuille. You need to brush with melted butter to stop it drying out
you use puff pastry for mille feuille, if you're brushing the top with beaten egg, don't let it touch the sides else it will seal the pastry so it won't rise. Mille feuille literally means 'thousand leaves'.
