RECIPES USING MARROW

I've just bought a marrow and now to be honest don't now what to do with is. Has anyone got any good recipes. Thanks.

Well....depending how big it is, you could cut it in half lengthwise and widthwise, scoop out the seeds, boil it for ten mins, drain and fill it with a minced meat and onions and a good tasting gravy, put in the oven and bake, or the west Indians make soup with it, peel, cube, boil till soft, mash, thin down with stock and add curry spices...

Ok, Marrow is yummy and yes it can be watery but it its also almost devoid of calories so munch away, try it boiled (in 2"chunks) in lightly salted water _ drain well!! and serve with a cheesy white sauce on the top ( cauliflower cheese style) or marrow makes a fabulous chutney just substitute any recipe that contains courgettes (alot cheaper too) and if you want to be really brave and trust me on this one it also makes a fantastic sweet muffin... you ready for this!
250 butter
450g soft brown sugar
4 eggs, lightly beaten
350g S.R flour
zest of 2 oranges, juice of 1
1 teaspoon cinnamon
1/2 teaspoon mied spice
350g marrow (peeled weight) grated
100g walnuts - or raisins if you have a nut allergy
Cream the butter and sugar until light and fluffy, add the eggs one at a time
sieve the flour and spices together then fold into the butter mixture. stir in the grated courgettes, orange zest, juice and walnuts till combined.
spoon into large muffin cases and bake at 180c for approximately 25 minutes or until well risen and golden brown, they should be firm to the touch.
cool and top with 125g cream cheese, 50g softened butter and 300g icing sugar with the zest of 1 orange ( mixed together till just combined - dont overbeat or the mixture will be too runny!
dare you to be brave and give it a go!!!! Nobody will guess what the secret ingredient is and they are really moist an very moorish :-)
