We are expecting visitors next week and the lady is a coeliac. I know to buy bread, cakes mix etc. (from Tesco) but I would like to make my cheesecake recipe, what do I use for a base? I tried to buy special biscuits like ginger nuts, but the only ones I could see were choc bis., wafers, bourbon, custard creams. Perhaps I should just make her a separate one without a base? Also, what about trifle? I could not find any sponges for the base also? Do coeliacs not eat trifle? Many thanks in advance.
Why not make up one of the cake mixes and use half to make a sponge base for the cheesecake and the other half for the trifle - Can't help with the biscuits though sorry.
My mother used to use cornflakes as a base for a yummy cheesecake - melt the butter and put in the crushed cornflakes with some chopped walnuts and a tinchy bit of cinnamon. Deee lish.
Not sure about cornflakes for coeliacs though? (Sorry)
