Just had cousin round. He's on a low fat, low carb diet (boxer, and is just above fighting weight)

Any good ideas?

He wants dinner tomorrow.....

Todays starters is prawn (from raw) roasted pepper, mozzarella and rocket salad.....

Main....boiled bacon and cabbage...I know snags and China are dying for an invite :-)

A nice whole red pepper stuffed with spicey turkey mince and chargrilled asparagus or courgette strips on the side and a dollop of half fat red pepper hoummos
Boiled bacon for a boxer? Im assuming that he's on a low carb high protein diet. So lean beef or chicken may be a better option as pork is very fatty ad a low source of protein compared to other sources for but then again maybe boiled bacon every once in a while wont be too bad as long as he doesn't eat it often and it will probably break the monontony of his diet if he often eats beef and chicken.

Sue...that is todays dinner...that he won't eat. I posted my menu because I know how much snags and China would love the main.....

Tell him if he doesn't eat whats offered you'll give him a clip around the ear. ;-) Then again, maybe not...

Ok China....not a problem :-)

Starter was lush.....main...yummy yummy, and some cabbage juice to drink on the side. Had a different cousin turn up tonight. Had to wake her up :-)
