an anyo e give me a tried and tested spicy bread pudding recipe. Many thanks in advance

I make one that everyone sees to enjoy.
Brioche
Butter
Seville Marmalade
Plump sultanas (M&S ones are good)
4 eggs
2oz sugar
pint of milk
Vanilla pod
cinnamon for dusting the top (or nutmeg if preferred)
heat the milk and the seeds from the vanilla pods (dont boil) whilst its cooling
Slice the Brioche and spread with butter and a generous helping of the marmalade. Layer into a greased oven proof shallow dish (you should get 2 layers) sprinkling on the sultanas as you layer the brioche. Beat the eggs and sugar together and then add the milk and beat to blend. Pour over the bread and let stand for about 45 minutes. sprinkle with cinnamon or nutmeg and put into the oven on as mark 5 for 30 - 40 minutes or until the custard has set and the bread is a nice golden colour. Serve with cream or ice cream

Delias recipe never fails though I have adapted it a bit .Have made this more times than I can remember. .And my brother can smell it from two miles away:)

Stale Bread .I use enough to three quarters fill one of those old fashioned cloam mixing bowls .Any old bread,brown white ,whatever's knocking around .I don't cut the crusts off either .It'll all soak down in the milk.

2oz Brown Sugar ( demerara or golden caster is fine)
2oz Melted Butter
1 heaped tsp Mixed Spice
1 Egg ( beaten)
Milk .
Grated zest of an orange ( optional)
Soak the bread in the milk ( just slosh about half a pint in ) until it's sort of sludgy,beat it with a fork ,add the rest of the ingredients and mix it all together ,grease an oblong shallow tin ,bung the mixture in and put in the oven .I cook it in a fan oven for about 45mins to an hour on 16C.
Stick a knife in to test.
Let it go cold ,dredge with icing sugar or eat it hot with custard.
