Have a pile of courgettes to use. Not keen on them own their own, any ideas for some tasty recipes?

We recently had courgettes the size of marrows and my mum made some of them into soup with other ingrediets. She got the reciepe of a website she found on google. If you want to seach for recipes on the web it might be worth putting "zucchini" in as well because thats the US word for courgettes. Another very nice idea is stuffed courgettes then you could fill them with something you really like.
Try this:
Courgettes au gratin
3/4lb courgettes
small carton double cream
3-4oz cheese, grated
1-2 eggs
Wash and cut off ends off courgettes and then slice. Place in boiling water salted water for 5 minutes. Drain. Beat up eggs, add a little milk and carton of cream, mix well, add grated cheese and mix again. Grease a flan dish and put in courgettes, pour mixture over and bake in oven gas 5-6 for 45 minutes.
