I know there has been some debate about this,I was wondering what you all thought of this. Some people say that you can re freeze and re heat, its fine so long as you heat properly, other say its a big no no,but it got me wondering also, how do you know what you buy 'fresh' really is fresh?

I have always understood that if you thaw frozen meat you should never re-freeze it unless you have cooked it, then it can be frozen.
Go to a reputable butcher/supermarket so that you can be sure your meat is fresh.
I do. We buy meat, freeze it, defrost it. If for whatever reason we can't eat it straight away (eg plans change) I would cook it then refreeze it. As long as it's thoroughly reheated, we've never had a problem.
And re fresh meat - when you get it from a butcher and it's recently killed, then yes it's fresh, but otherwise you don't know how long ago it was slaughtered and kept in the cold chain before it gets to you.
If meat is fresh when frozen you can cook it and refreeze it when cooled, but if meat is already cooked and you freeze it you CANNOT refreeze it due to bacteria, you need to eat it usually within 3 days of defrosting....
If you buy it raw (like boxy) you can freeze it. You can then defrost it...cook it and freeze it again.

I would defrost and refreeze raw meat.
*wouldn't

I just wonder sometimes, how fresh the meat is when you buy it.Its a pity there isn't some way of knowing exactly when the meat was set out for selling(I'm talking about butchers and markets more than supermarkets here)I love shopping at the local market, but I have to admit some times the meat does look a little worse for wear, and I don't want to have it lying in the fridge for longer than that day.
I suppose thats the price ( so to speak) you pay for non supermarket produce.
Just a thought.....
