i usually stuff mine with veggies and quinoa or cous-cous.
if you don't want the carbs, why not mis some cream cheese with pesto and walnut, or sauted leeks and some borsin cheese? (You could add some ham or bacon bits if you're a carnivore)

noo, im not a veggie, but i dont eat alot of meat, so the veggie ideas are perfect.
i do like spicey flavoursome food,
i quite fancy a cheese, onion and tomato filling? but that sounds a bit boring doesnt it?
how could i make that ^^ a little more interesting?
Roast some veggies-mix with cooked bulgar wheat-stuff into peppers with feta cheese crumbled on top.
Or-make loads of garlicky mushrooms and fill peppers with them.
