US dollars?
Egyptian pounds?
Pounds sterling (pound coins)?

they prefer us dollars, dont like pound coins because they have problems changing them into notes, and most banks out there only accept pound coins from accredited business people, not waiters waitresses etc and everyday persons

I would just tip in local currency. I got an unofficial guide once, to take us around the museum in Cairo and he quoted the price in US$ but as far as tips are concerned, I certainly wouldn`t take US currency just for that.
As I'm sure you know, average income is only one part of the equation and is fairly irrelevant on it's own. It has to be compared against the average cost of living in the country. Are you suggesting that the average cost of living in Egypt is equivalent to the average in the UK? If not then the comparison is meaningless.
Paper UK monies & you get change in local currency. Pick up some change on an airport purchase.
