My girlfriend is coming for dinner tomorrow.
She ususally just eats what she is given and leaves the menu up to me.
However, she has requsted "a nice fish dish". Great - I am a meat man can cook you the best steak or Lamb Chop, I will eat fish when out but never bother at home.
I need a easy recipe that will still impress, if possible...

Why don't you get some of that fist fromthe supermarket where you choose what you want and what flavour butter and they put it all in a bag that goes in the oven (tempreatues and timings are on the back).
Sounds good Naz. Another alternative is to find a good fishmonger as they often have good info about recipes as well as good fish
A nice simple one would be to do some fresh salmon with some steamed spinach on top served with new potatoes, additional veg and a nice sauce.
Fresh salmon & unpeeled sliced potatoes all grilled (brush with oil), served with avocado, salad with fresh lemon.

Lemon sorbet sprinkled with shredded lemon rind for dessert.
what about a fish pie
For me, you can't beat cod in parsley sauce.
I'd go with the salmon suggestion, all you have to do is steam it! Nice veg, nice hollandaise sauce (which you can buy fresh in the supermarket) - bingo.
A nice fish dish? Time to hit the chippy!

Squarebear - I love your idea, but need to put some effort in to it...
Thanks to the rest of you, I like the salmon idea, minimum fuss but still sounds like a nice meal.
