Is Beyonce pop music? I quite like her. I also like Shakira's voice, Anastasia's voice and Christine Agularia's (sp!) voice, unfortunately the latters songs are often crap which lets her down but I like a lot of the upbeat stuff.

There's others been mentioned on here I like but I wouldn't class them as pop music necessarily so wasn't sure they counted.
