My own would be thermal areas of Rotorua, the mountains in the middle of the North Island, art deco Napier, Wellington (best on a non-windy day though), whales at Kaikoura, the lakes and mountains in the general area of Queenstown/Wanaka - try lunch at Gibbston Valley winery and maybe a bungee jump nearby at the original bungee site. And Milford Sound is beautiful though often rainy.
Nothing special about Auckland and Christchurch in my opinion. Bay of Islands is very pretty. And the Hundertwasser toilets at Kawakawa are worth a visit!

Hostels and motels all over the place.
