I remember after the war my gran used to make a pie with sheep lungs

She also managed to get some pork just before Chtistmas direct from a farm and asked the supplier 'Can you get pigs trotters'? He said 'No problem'
Came around yesterday with a dozen of them. 'How much?'
'Anything you like we generally just throw them away' !!!!!!

I don't remember lung pie but we used to have bone pie. This was made from rib bones and veggies in shortcrust; very little meat but very tasty!
Last year I had a cows tongue from a local organic supplier, she said that the retailers just don't want the offal these days because there's no demand. I think this is just because people don't know how to cook it now.
She also brought me an ox-tail and I made a lovely stew and some soup from it.
I wanted a calves or pigs head (to make brawn) but she doesn't raise pigs and her cattle are not slaughtered until they are older.
