3 Answers
Esp. for Pastafreak: the cake was delish. Well worth making - and, as promised, here's the recipe.
Cake: 4oz unsalted butter; 6oz caster sugar - beat til fluffy. Mix in 2 eggs.
Add & mix in 3&half ozs polenta, 3oz pl.flour, 1tsp each of b.soda & bicarb.soda, salt & zest of 1 orange.
Stir in 4tbsp milk. Pour into baking tin, cook for 40-45 mins at 180.
For the syrup: grazed zest & juce of 2 oranges & 1 lemon. Gently heat then add 12oz icing sugar, bring to boil, simmer for 5 mins until forms a syrup.
While cake is still warm, pierce all over & pour over hot syrup. Leave in tin til cool.
Serve with creme fraiche, clotted cream or whatever you darn well like. Sticky (almost like marmalade) and very very nice .... x
