I want to make a cherry flan for tonight, the cherries are out of the freezer and thawing, but do I need to cook them, or can I put them onto the flan case as they are before covering them with glaze, as I find that cooking them spoils the colour and they lose too much juice?

If you're baking the pastry blind you may find that the cherries don't cook through in time. Why not just start them off with a little sugar to get the juices flowing? When cooled cover with the glaze.
Raw cherries would not be very tasty would they?
