How come some court trials have a jury and some just a judge?

are you thinking of those hearings where the defendant has already pleaded guilty, just a judge would then be needed?

If the defendant is indicted on criminal charges and the case proceeds to the Crown Court, trial is before a judge and jury.

In less serious criminal cases the case is sent for summary trial in magistrates’ court. A summary trial is before a bench of magistrates.

A civil trial is in the vast majority of cases by a judge alone. Juries are now very rare in civil cases.
