I agree with the above answers...contrast is very helpful so would depend on foods being served. Despite my age -I have a cataract in one eye in which everything looks white & cloudy. Thus, looking at something against a white background is useless -it disappears! Also, if there is too much/not enough lighting I can't see items too well either. Bright light reflecting off surfaces reduces vision, so maybe have a matt surface/tablecloth also. I suppose also it depends on the medical condition which caused the reduction in vision, as with some conditions vision is dark/black, not white like mine! Thus, try different colours with the individual. Hope it helps. x
