what is the style or form that hymnal music structure called? For instance I want to write hymnal music but I also don't want to just copy what already exist but I don't know what style of music this is called.

4 part harmony? Most of this type of music follows certain rules. If you want a couple of excellent books -

Firstly, Bach's Riemenschneider. Any good music shop will know what you mean. This is full of Bach's choral music and will give you so much inspiration. The book must be a couple of hundred pages. Absolutely full of ideas. At least have a look.

Another one that deals with learning the style of writing is 'Coninuo playing according to handel - his figured bass exercises' - with commentry by David ledbetter.

Other than this, go to a local music shop and ask for any good books on writing harmony.  It's all linked from vocal music back to organ etc.
