i defrosted some filo pastry yesterday, only used a few sheets of it and now i dont know how to use it up, any ideas? dont want to waste it. was supposed to having salmon and mussels tonight on a bed of purple sprouting broccoli, the recipe done on Lorraine on thursday.
did think of salmon parcels but would it go with a bed of broccoli surrounded by deshelled mussels in white wine sauce? i did notice that the filo cooked very quickly, how can i ensure that the salmon will be cooked inside, how may minutes do you reckon?
Salmon takes only a few minutes - or cook the fish first, drain and make up the parcels, the cooked mussels can go inside too. Serve the parcels on the brocolli bed.
sorry Boo, i didnt mean to dismiss your idea, i was so engrossed in creating something together with the recipe i had already seen. i dont have a tin for the jam tart so thats why i moved on, sincere apologies! we dont do jam in our house either so definitely a no no. thanks for your idea though and will maybe help someone else in the future, grovel grovel.
