On the entry form it states "Closing date: Midnight Tuesday, May 17, 2011". Do you think entries should be accepted on the 17th May?

I understand that to mean midnight 'tonight', so you have up until then to submit entries.

00.00 was when it changed from 16th May to17th May; so it ought to have stated Midnight on Monday..........

Helen's response is nonsense. Referring to Midnight as the 'start' of a day is certain to lead to confusion......

Apologies if this is not clear. Please let me explain.
Midnight is actually the start of the day so the competition closed
00:00 on 17 May which was 15 hours ago. If you are thinking it's
tonight at 00:00 that would actually be the 18 May as that's the
start of the next day. Please bear this in mind when entering in future.
On this occasion only, if you email me your answers I will add them
to the list just this once.

JTH, thats what I thought, I entered by email to her as she said in her response and told her they should change to date to make it clearer.

Here's the e-mail reply received after entering and just saying they should make it more clear:-

Dear Catherine,
00:00 is actually the 17th May and not the 16th May. Please ensure in
future your answers are submitted in plenty of time to avoid any
disappointment.
