Our replies might be different then. I can think of more than three instances when written work could be necessary, but here are some:
Say it's a gardener and he is training other gardeners.
a) a lesson plan showing what he's going to be teaching them, say during the next week
b) health and safety guidelines in plain English eg about putting a fork through your foot, dealing with chemicals etc, making reports in case anyone does have an accident
c) writing up student reports on progress
The same would apply in principle if it's an outdoor sports person but the context and examples would be different.
I hope this helps.

Boxtops has covered it brilliantly but in terms of say an Outdoor Pursuits Instructor it could be instructions for a particular activity such as climbing or equipment used.
Similarly a route guide/clues (map not really written as such) for activities such as orienteering or a navigation exercise. Could be a day plan so people know what happens when and where and maybe details like emergency phone numbers/meeting points.
Maybe a risk assessment. Writing down attendees and any particular special needs such as if it is a group of school children and one is asthmatic/diabetic/epileptic etc... A register list maybe for ticking people off, especially large groups and especially with children.
Warnings maybe for health and safety purposes
As Boxtops said, a context would be useful.
