how can i keep my oven shelves from turning brown? is it just from cooking food in the oven?

Unfortunately its the cooking process. You need to buy a spray on oven cleaner, dont breathe it in, read the instructions, they usually work well but very messy.
I'm afraid if you use your oven it's going to get dirty from spitting fat etc. I soak my shelves in bio washing powder and hot water over night. It washes off easily in the morning
1. Don't use it for cooking .. or
2. Cover things with foil.
you can buy a kit in most supermarkets, you have sleeves to put the oven shelves into, and they come out really clean! used one a while ago, need to buy a new one soon me thinks!.............hate cleaning the oven!...........
Or ..... use the services of someone like Steve of Ovenheat, he takes care of all my oven nasties:)

ratty how often do you do this. as someone who has cleaned oven maybe 4 time in 5 years maybe this is where I am going wrong.
Years ago someone said to my friend, my oven is blue and it shows every mark, I wish it was black like yours" My friend never let on that her oven was really blue as well
Well Grasscarp I like things clean and sparkly so i do clean my oven a few times a year, maybe 4 or 5. But then if you don't leave it all to bake on too much it's easier to clean. The oven is 'self cleaning' which basically means you turn it up full and leave it on for an hour and the muck burns up and you can just wipe it off. I do have a silicon sheet in the bottom to catch stuff that drops down, and that is easy to rinse off. And I do the shelves as I said. None of it takes very long.
I just soak the shelves for a while in hot soapy water then give them a scrub with a brillo or one of those wire scourers.

thanks to all for your comments - since my cooker is new (the very first one i have had from new) i have been cleaning the hob everyday and the oven once a week, so maybe i shall trying soaking them in the bath overnight like one suggestion, i do have a spray but like said its messy!
I wash my oven out every 4-6 weeks, the shelves are soaked in the sink with hot soapy water while I wash out the shell of the oven, then I scrub the shelves and side shelves with a wire scourer, they are a godsend they shift the stubborn grease quickly.If you keep up to it it saves you a lot of time and mess later on..Wiping the shelves down when the oven has cooled down a after cooking cuts down on the build up of grease in between times. I also line my grill-pan with foil so I can throw the foil away after using it and wipe the grill-pan out scrubbing the rack with a scourer if necessary.
