It's an Italian dessert, really light and frothy, made with eggs and wine. It's actually a favourite of mine to serve at dinner parties 'cos it's so easy. It also takes about 20 mins to prepare. Take 4 medium egg yolks, 100g (3oz) caster sugar and 100ml (4fl oz) sweet Marsala wine. Heat a pan to water to boiling point. Put egg yolks and sugar into a large bowl to rest over the pan. With bowl in place, reduce heat so water just simmers. Whisk eggs and sugar for 15min until pale and foaming. With bowl still over heat, gradually pour in Marsala, whisking all the time. Pour mixture into wine glasses and serve immediately.
