helen, how hot should the pan be? do i cook it slow or fry it hot? i love roe and its my 1st time cooking it. usualy go to the chippy lol

You're trying to imitate what the chippy does, so that means HOT oil (or butter). This might help:

As Helen points out, you could risk burning butter. My own preference would be to use a light olive oil.

thanks all im off to give it a go, i will remember your wisdom, thanks again..
For the crispy outside, gently dip in beaten egg then in seasoned flour. Let it sit in the fridge for ten minutes r so then fry as described.
