Last year I booked a holiday through Direct Holidays and noticed they had some single parent offers. None were for hotels, all were for studio apartments. I think First Choice do something similar.
I usually go abroad on my own with my 2 kids as Mr Brik hates holidays. I always end up having to pay adult rates for myself and my 10 year old and then get child rate for my 5 year old.
Good luck with your search.
