phising emails not traceable?

i am aware of these scam /phising emails- but how come the email is not traceable especially by banks and ebay? since whoever is sending the email is in theory leaving a fingerprint-do the scammers use software/programmes to hide the real email address that needs to be expertly "decoded"?

The admin will be swamped with spam so the logs just go to the bin, thus untracable. Alof of spammers send from open wireless networks and corporate networks too, and then use a proxy connection. VERY hard to trace. Btw im not a spammer
