In Germany it is often whipped, then salt and pepper added and some finely chopped onion. It is then spread on dark German bread, Pumpernickel or if you are wanting to watch your weight then on ryebread. It has many other uses, makes excellent Cheese cakes. It can also be whipped into a desert to which a little sugar and fresh fruit is then added. I buy it regularly and make a Fine German Cheesecake with it.
Yes, it is lovely in strudel! You can always get it at Sainsburys, Morrisons and Lidl. Not sure about the others. I used to have it for breakfast on some German farmers bread with salt, pepper, a little chopped onion and a few slices of tomato. Very refreshing and very healthy! Not sure how much I pay for it, but am getting some tomorrow so will post the price then.

We eat loads of it on rye bread with apricot jam.
Morrisons are doing Ehrmann Quark 500g tub for a pound at the moment .
It makes lovely cheesecake and you can use it in lots of sweet and savoury recipes
You can use it srcambled egs and mashed spuds instead of butter and in pasta dishes as a replacement for full fat cream cheese.
