Is there any problem in me replacing a single socket with a double one, on a ring main?

No, you will be fine. If you exceed the draw on the mains ring you will trip the RCD or burn the fuse wire.

As j2b says, you can swap a single for a double socket,due to the fact you can have as many outlets as you like on the condition the floor area contianed within the ringmain doesn't exceed 100 square metres.(bizarre but true)

try tlc-direct.co.uk, wiring accessories, 1 to 2 gang conversion. That way you can use the existing single box behind your single socket [if it's flush mounted], saves loads of time chiselling out & making good. Don't know if the converters are available everywhere tho' Don't forget to turn the leccy off to that socket first - and check it before you start work
