I would like to make some cheese sauce using cornflour and can't find the recipe. It only uses milk, butter, cornflour and cheese, with mustard and black pepper for flavourings. I am sorry to be so ignorant as to how to make a basic sauce, but I used to constantly refer to a recipe book and can't remember which book it was as I haven't made it for ages. Any help would be appreciated as I'm very hungry and have already cooked the macaroni! Moyra

To make a cheese sauce with normal flour, you melt the butter take it off the heat, add the floor and get it into a paste and cook that gently and then add your milk slowly while it is off the heat - I usually use half milk, half chicken stock, then add in your mustard/pepper and melt in the cheese, I guess the principal would be the same with cornflour, or you could warm the milk and add in the cornflour blended with a little milk, but i have no idea what the proportions would be.
