forget stuffing it, Rub off the loose scales with a knife ( as many as possible)
(I am assuming its been gutted) , get some cooking foil, rub butter into it, lay the fish on the foil, put a couple of knobs of butter on the fish, add a bay leaf, fold it into a parcel so its sealed, stick into a hot oven for around 45 mins.
it will fall off the bone and taste delicious.
