Has anybody got any good italian recipes. I'm tired of making the same old meals looking for something different.

Chicken Scallopine:
4 skinless chicken breasts
1 lemon, juiced
Seasoned breadcrumbs
Place each chicken breast between 2 sheets of clingfilm or greaseproof paper. Using a mallet or a rolling pin, batter them until slightly flattened but not pulverised!
Dip the chicken in the lemon juice, then dip in the breadcrumbs.
Heat some oil in a frying pan and fry chicken over a medium heat for around 3-5 mins on each side.
Serve with green salad.
Steak Pizzaiola
4 steaks of your choice
2 balls fresh mozzarella
Sauce:
2 400g cans peeled plum tomatoes
Olive oil
1 onion, finely chopped
1 clove garlic crushed
Salt and pepper
Fresh basil
Begin by making the sauce. Gently fry the onion in the oil for about 8 mins. Once they become slightly translucent, add the garlic. Cook for a further 2-3 mins. Add the can of tomatoes and squish them down as you stir them. Let this come to a gentle boil and leave to simmer for around 45 mins. (We use this as our pasta sauce so any unused can be frozen and used again) Season and at the last minute, throw in the basil leaves.
Fry the steaks to your liking, place a thin layer of the sauce over them, add a bit of the mozzarella cheese and finish in the oven until the cheese is melty.

Mushrooms thinly sliced
125g Seasoned flour
40g butter
150ml Marsala
200ml Chicken stock
Place the pork between 2 sheets of clingfilm and flatten
Dip each slice into the seasoned flour and shake excess off.
Heat oil in a pan and sear the pork over a meduim heat until golden brown and cooked through (3-4mins each side)
Once seared, place on a plate and cover with foil to keep warm.
Add the butter to the pan. Add the mushrooms and cook until golden.
Add the Marsala and reduce by half. Add the chicken stock and allow to boil for a few minutes. Season. Place the pork back into the sauce and gently heat through. Serve with pappardelle pasta or mashed potatoes.
