I need to unscrew some of my kitchen cabinets. The cabinets seem to be attached (to the wall and other cabinets) with some sort of plastic clip with two screws in each. You can unscrew the screws until you turn blue - (as the song says, they go round and round...). Obvioulsy some sort of locking mechanism I can't figure out. Does anyone know how this works?

They are quite often fixed with a 'double ended' screw. One half is a female end and the other is the male end, and they screw into each other. Try holding one side still and unscrewing the other side.
Or try loosening the screw slighly and then lifting the cabinet upwards, as some of the cabinets are only resting on brackets fitted to the wall from behind, and the double ended screws are for bringing the cabinet closer to the wall..........
