If you have a pan that's not non-stick...Heat the pan till it's really hot and drops of water will roll about in little sizzling balls. Put in a drop or two of cooking oil, and smear it over the inside of the pan using a paper kitchen towel. Place the salmon in the pan exactly where you want it, ('cos it'll stick!). Lower the heat a bit. After a few minutes, shake the pan from time to time till the salmon unsticks and moves about freely. Then, (and only then), turn it, and do the other side. Result - crispy-crunchy on the outside, moist in the middle. Nice.
