I did encounter a similar problem earlier this year. My niece had a baby in January and had taken lots of pics with her digital camera. Unfortunately she had never got around to setting the correct date and time and the pics were showing "June 10 2001". She gave me her memory card and asked me to print up her pics and whether there was some way I could remove the date....
sorry, I don't know; but somewhere in the setup instructions there should be some way of preventing the dates from being recorded in the first place? You could try switching it off and that might remove them from photos you're already taken, I don't know.

The only solution I found was to use the clone brush or smudge tool in my Ulead iPhoto or Paint Shop program. It took a bit of doing but it was worth it.
