seafood sauce

bought a seefood mix, mussells, squid, praws etc. Wanted it with taglietelle but can anyone recomend a sauce i can put with it. No cheese

Without cheese? Is it actually possible to have a meal without cheese? Surely not! (I put cheese with almost everything!)

did i mention no garlic too ha ha. Bloke hates both. Second recipe sounds nice. Do you think would be ok without garlic?
You could simply leave the garlic out (possibly adding a bit more onion and black pepper) or perhaps substitute it with some finely chopped leek.
Why not Mary Rose sauce, or a white wine and cream sauce.
We often have that with sweet chilli sauce (after cooking the seafood first in butter)
I would do a wine sauce as well. You can add whatever you want to it...
Mix some mayonnaise with some tomato ketchup.Instant seafood dressing.You can add a touch of mustard too if you like.

yes but i think thats more for a prawn cocktail. He probably wouldnt want wine either. Leek sounds nice.
You can't taste the wine 4get....it get reduced and then a splash of cream added.

This is my staple for 2 people:

Good EV olive oil
Teaspoon chili flakes (or less depending on how hot you like it)
Shallots or one small white onion
Seafood mix
100ml white wine
Handful cherry tomatoes
Lemon
Fresh parsley

Boil water, add a teaspoon sea salt then add the tagliatelle and simmer s

Meanwhile...
Heat two tablespoons olive oil on a medium heat with the chili flakes
add the chopped onion or shallot and fry until translucent. You don't want brown bits.
throw in the halved cherry tomatoes and cook down for a few minutes, breaking them down with the back of a spoon
add seafood to heat through - how long depends on whether they are pre-cooked or not, but be careful not to overcook as they will be rubbery
add juice of half a lemon
add a half ladle of the pasta water
test sauce for seasoning, add salt if needed (remember the seafood and pasta water are quite salty) and a good dose pepper
drain the pasta and add to the sauce (you want it al dente - 7 or 8 minutes should be plenty, as it will cook further in the sauce)
add loads of fresh chopped fresh parsley

Make a Chowder instead. Add potatoes, sweetcorn and maybe a bit of carrot with milk and cook it all up together (cook the veg first then add to the milk- add the fish at the last minute). It goes lovely with a big chunk of soda bread.
