It was the use of the word 'shallow' that lead me to plates, but am sure you are correct.

I thought Plates could be the answer too , but I see Blinis are described as 'shallow-fried'.

I have put Plates as the T plates fits in with the third T in "Totality" for 11d. The clue for Totality is "The whole amount".

I may be wrong.

I should have added your N is wrong. The clue for 18a, Watch Face, is Dial. Therefore it's a L not an N
