My knowledge of computers is a bit basic. I've got 400+ e-mails in my 'deleted' box, but how do I get rid of them permanently before my boss finds out exactly what I spend most of my working day doing?

Right click the deleted items folder then select "Empty deleted folder". Be warned that the email server may have been programmed to "hold" your deleted items after you have deleted them and the entire contents of your deleted items is probably on a backup tape somewhere.
Depends how deterimined your boss is. If (s)he's some CIA super mega-info-freak, the only way to get rid of everything is to blow up the building. If not, the other answer will probably be your best bet. This is why I like webmail like yahoo.com or similar.
