I understand it is possible to add a ceiling under a a conservatory roof.

We have a blue glass roof & have been told it is possible to fit plasterboard underneath, what would be the method of condensation control please?

Two ways, mike. Either cross-ventilate the void between the plasterboard/insulation and the glass..................
or .............. totally seal the underside of the insulation before the p/board goes up (called a vapour check ............ must be fully taped to seal properly)
Def agree with TB you are creating a cavity that must be vented twixt top glass roof and bottom ceiling that is fixed to a form of wood or metal structure with air vent/s incorporated HTH Tez
