It depends on how well done, or rare you prefer your meat to be.

Are you asking the interenal temprature required to cook med, or well done?

Or the temprature you should cook the steal at?

Two very diffrent things, think of the temprature of a fry pan or BBQ VERY HOT INDEED but short cooking time to acchieve a cooked steak.

There are food processing systems that cook meat at very low tempratures in water in sealed bags over very long periods.

So you see the diffrence, hope this helps
138.83 degrees (F), take it off grill and it will increase to 140.27 degrees (F) for the perfect 'pink in the middle' steak... Serve immediately. (Sirloin is next to the last cut of meat of choice, however).
