Flying rats, grey vermin and disease ridden birds, Yes pigeons.

Hi there, the other day i was invited to a neighbors house where we had pigeon and it was the most succulent and tasty bird i've had for a a very long time so me and the neighbor gets talking and he showed me his air rifle and told me he shoots pigeons on the canal and on wasteground and takes it home, washes it, defeathers it and puts it in a brine and lemon soluion to kill germs before marinading and cooking or freezing.
H'es told me he's been eating street pigeons for 5 years and has never had so much as a bad stomach and has saved a fortune as pigeon now is his main protein source for each meal and he tells me the brine and cooking process kills all germs and parasites which makes sense.
So if there is no problem doing why are we not eating more of delicious bird, and would it be illegal to sell the meat on? If not why?

Carrust all the animals we eat have parasites and a multitude of harmful bacteria hence why it's good to cook it. Rowanwitch would there be much of a difference between wood pigeon and feral types or would the differece be slight like between a pig and a wild boar?
Mcfluff, i'm pretty sure pigs eat anything and everything yet we eat them.
