For more on marking an answer as the "Best Answer", please visit our FAQ.I learned (in my day) by having a straight edge on the fabric to the right hand sign - you hemmed a certain distance from the edge so you always had to keep the same distance in a straight line.
It comes with practice - if you hold the fabric taut as it comes out of the machine (e.g. behind it) that helps stop the fabric shifting about.

I had to do the paper thing in sewing at school too (It wasn't a subject I chose BTW, but my school had a policy of swapping the traditional male/female classes occasionally, so even though I picked stuff like metal work and TD I had to take occasional lessons in classes like needlework and home economics as well)
