OK, here are a couple I really like:

1. (Discovered in a small sandwich bar in London):
Stilton cheese with mango chutney.

2. (Discovered in an auction room café in Diss):
Peanut butter, celery & cottage cheese.

Cranberry and turkey.

One we make at work with any left over roast lamb. Chop up and mix with finely chopped onion, add some mint sauce to a bit of mayo and mix all ingredients together. Its very tasty, our customers love it. We call it Lamb crunch
Or finely cut up slices of ham and mix with egg mayo or
finely cut up slices of ham and turkey slices and mix with egg mayo

Cream Cheese, Ham and Pineapple
Cheddar, Peanut Butter & Marmite (toasted, ideally)

Cream cheese and apple , very easy just chop up green crunchy apples unpeeled and mix with cream cheese.
