Cream of Tomato ( serves 4)

250g fresh tomatoes, halved
1 tbsp olive oil
25g butter
150g onions, thinly sliced
1 clove of garlic, crushed
25g tomato paste / puree
400g tinned tomatoes
1 veg stock cube
500ml milk
pinch of caster sugar to taste
salt and freshly ground black pepper

Preheat oven to 230/ 450/ Gas 8
Place the tomatoes onto a roasting tray with half the olive oil
place in the oven and roast for 15 mins
remove and cool slightly before peeling off the skins and discarding
roughly chop the tomatoes
heat remaining olive oil and butter in a large saucepan
add onion and cover and sweat 3-4 mins
add the garlic, tomatoe paste and tinned and roasted toms
saute for a further 2-3 mins
Add remaining ingredients and bring to boil. reduce to simmer for 2-3 mins
Put into a blender and whizz until smooth
Adjust seasoning to taste

we have homemade chicken and veg soup with garlic bread
I've done something similar but used a eef stock cube and added some basil towards the end of cooking time.
