diet and nutrition qualification

I'm in early 40's and looking for a possible career change in the health, diet and nutrition areas. I have been looking at courses, OU diplomas etc , but am really confused as to which qualifications are recognised for work in this area. Is a full degree required or would a diploma be enough? any advice welcome . :)

How easy is it to get a copy of your degree certificate, how do I go about doing this?

from this link (NHS Careers) it says

It is necessary to have a recognised degree, MSc or post graduate diploma in nutrition and dietetics to work as a dietitian.
