Aubergine Recipe in last Sat telegraph

Does any one have the recipe book that came with last Saturdays Telegraph. My dear old mum wanted to do the aubergine dish, has bought the aubergines but the booklet has been re-cycled by dad.(i don't think he likes aubs!) Can anyone help? TIA

Was it the Melanzane alla Parmigiana, Timbale of aubergines with Parmesan and tomato?

The booklet is the thing that was recycled. I did not see it but she told me about it so the name of the dish remains a mystery too me. If you read this Dickiedot would you check the link from wolf63 and tell me if it is the same. Sorry I took so long to get to your post, but work got in the way. I am off now 'til weds.

Well done Lie in King, that was the recipe and I couldn't find it in Wolf63's link. You beat me to it!
Dicky the cook let us know how it turned out and I might have a go myself.
You can also add ricotta and mozzarella cheeses between the layers of aubergine.

This is gorgeous and easily halved.


Roasted aubergine with walnut and raisin dressing

2 aubergines
olive oil
1 onion , chopped
2 garlic cloves , crushed
50g raisins
2 tsp ground cinnamon
2 tsp ground cumin
2 tsp ground coriander
handful walnuts , chopped
½ small bunch coriander , chopped , plus extra to serve
yogurt , to serve
lemon wedges , to serve


Halve the aubergines lengthways, slash the cut side, brush all over with olive oil, season and roast at 200C/180C fan/gas 6 for 40 mins or until really tender.

Meanwhile soften the chopped onion, crushed garlic, raisins, ground cinnamon, cumin and coriander in a little oil, then stir in the chopped walnuts and most of the chopped coriander.

To serve, scatter over the aubergines, sprinkle with more coriander, and eat with yogurt, lemon wedge
