has anyone got any easy healthy lunch ideas. Something I can prepare the night before or in the morning. I have exhausted baked potatoe and am not keen on sandwiches as they're kind of soggy by the time you get to eat them.

Oh and just to make it really tricky I can't have dairy.

rice salad , pasta salad , these can be varied with diff fruits and veg.
pate or dips and crackers,
chicken drumstick with bread or whatever.
cold pizza if you like it ( I don't )
agree rice salads,  rice boiled with some sultana's is really nice and can add something you like tuna or meat.
what about filled wraps they dont go quite as soggy as sarnies as long as you dont put in tomatoes
What about houmous with pitta bread and carrot sticks and cherry tomatoes.
soup in a flask|
take your sandwich fillings and bread separately and assemble just before you eat.
John West's Tuna Light Lunch - French or Italian style. Very good - low fat and less than  250 caories. Must admit though, five per week would be too much!
